how to peel Cassava Root (Yuca)

Peeling Cassava Root, also known as Yucca or tapioca root, can be a daunting task if you have never done it. But with a few tricks of the knife, you can be an expert in no time.

Make sure that when selecting a yuca at the store, that you select a firm root.  I would even go as far as breaking one of the ends off to make sure the root is nice and pale white inside and has no blemishes or dry spots.  Also make sure there aren’t any soft spots on the root.
