Watermelon popsicles

This holiday weekend we have a house full of family visiting from out of town. Among them, my adorable four-year-old niece and one-year-old nephew. I’m always making ice cream, but I figured those may be a bit heavy and rich for them. A homemade popsicle is a perfect solution!

To make a good popsicle, you need water and sweetness. With all the rain we have been having lately, this season’s crop of watermelons is extra sweet and juicy. Hence why they are perfect for making popsicles. Throw in some strawberries into the mix and you have yourself some enjoyable watermelon popsicles.

Watermelon is 92% water and it’s a high-lycopene food with cardiovascular and bone health benefits and also carries a healthy dose of vitamin C, vitamin A and potassium. That means it is good for you too.

Ingredients:

  • 4 cups of watermelon cubed

  • ½ cup of strawberries

  • ¼ cup of sugar

  • 2 tablespoons of fresh lemon juice

  • 1/8 teaspoon of powder ginger

  1. Puree watermelons, strawberries, sugar, lemon and ginger in a blender.

  2. Blend on high until the sugar has dissolved and the mixture is smooth. You can strain if you want to but I like the bits in it.

  3. Pour the mixture into the ice pop molds and insert sticks.

  4. Freeze for three to four hours until frozen solid. I prefer to freeze overnight.

Tip:

If you don’t have ice pop molds, use small paper cuts. Cover with aluminum foil and poke a hole in center and place a stick through it.  It works just as well.  After frozen, simply rip off the paper cup when you are ready to enjoy one.
