Monica Morillo

So my first guest on Lizette Invita is no other than my lovely “Mami”Monica Morillo.  Mrs. Morillo is a great cook and also loves to entertain-the apple doesn’t fall far from the tree I see.  She lives in Miami, Florida with her husband Francisco.

She helped me cook a Lomo de Puerco al Horno 

My mom came to visit me. That made for a wonderful opportunity for us to be together in the kitchen. Knowing that we had a house full of people, we ventured to make pork loin. This pork loin comes out moist and flavorful.

This recipe calls for sour or bitter orange. Sour oranges are also known as Seville oranges although  its origin is from southeast Asia. Think of its flavor as a cross between an orange and a lemon. It is used widely in the Caribbean in marinades for pork and chicken.

You can find sour oranges at most Caribbean or Latin food stores.

Ingredients:

  • 3lb Pork Loin

  • 3 Tablespoons of Sazon Seasoning

  • 2 Cloves of Garlic Minced

  • Juice of 1 Sour Orange or 2 Tablespoons of Apple Cider Vinegar

  • 1 Tablespoon of Oregano

  • 1 Tablespoon of Pepper

  • 1 Tablespoon of Salt

  • 1 Bottle of Beer

Instructions:

  1. Preheat over at 350 degrees.

  2. Poke holes in the loin with a sharp knife.

  3. Place pork loin in a baking dish.

  4. Spread the sazon, garlic, sour orange, oregano, salt and pepper into the holes and the outside of the loin.

  5. Pour beer over the pork loin.

  6. Bake at 350 degrees for an hour to and hour and a half, depending on your over, until the internal temperature of the pork loin is 165 degrees.

  7. Let rest for 10 to 15 minutes and serve.
